Today’s recipe is an authentic version of making Unniyappam.
Ingredients
Raw rice/Pachari-1 cup
Small banana-3 to 4 (you can
use Robusta banana also, but a medium ripe one )
Jaggery-5 to 6 pcs
Cardamom Powder-1/4 tsp
Black sesame seeds-1tsp
Coconut bits-1tsp
Salt a pinch
Coconut oil as required

Water as required
Preparation
· Wash and soak rice in
water for 4 to 6 hours.
· Boil ½ cup of water
in a vessel and add jaggery to it. Heat on medium flame until the Jaggery is completely
melted.
· Let it cool down and
strain jaggery syrup through a strainer ·Then grind the rice by adding small
amount of water. Now add bananas and jaggery syrup to it and grind to a fine batter
(not too fine).
·The consistency of the
batter should be like dosa batter consistency. Keep it idle for 8 hours or
overnight.
· Fry the coconut bits in
ghee until it turns golden brown and add coconut bits, cardamom powder and black
sesame seeds to the batter.
·Heat coconut oil in
appakara/paniyaram pan (special pot to make sweet ball to get the perfect
shape) or we can make it in a normal pan too...but the shape will be different.
·
Pour 1 or 2 tsp of batter to the pot and cook it on a medium flame.
·
When the bottom gets brown colour, turn it and cook the other side.
·
Always cook it in a low or medium flame.
Authentic Unniyappams are
ready to serve.
