Otta  appam is an Indian rice pan cake. It is very easy to make and I could not wait to share this recipe. It needs no soaking and grinding of rice. So let’s see how to make this fluffy Ottaappams...





Otta appam/Muttada/Mutta pathiri



Ingredients


All-purpose Flour- 1 cup

Rice flour-1/2cup

Egg-1

Hot water-1/2cup

Coconut Milk-3/4 to 1cup

Baking soda-1/4tsp

Salt a pinch



Preparation




·         Take a bowl, add Rice flour and add hot water to it. Mix well.

·         Next add all -purpose flour and coconut milk. Mix it again.

·         Then take a blender or mixer pour all the other ingredients and rice flour- all-purpose flour coconut milk mix. Blend it for (few seconds) to a good pouring consistency.

·         Then heat a pan or clay pot.

·         Once the pan is very hot, pour a ladle full of batter. Once the bubble starts showing up every sides reduce the flame and close it with a lid. Allow it to cook for 2 to 3 mins.

Note:

·         If you rest the batter for 2 to 3 hours, then avoid baking soda.

·         If you like you can add 1 tsp sugar to the mix. It tastes good.

Fluffy Ottayappam/Muttayappam/Mutta pathiri is ready!!!!! Serve it with coconut milk with sugar,Egg curry, chicken curry…. Here I served it with Egg curry.
