Today’s recipe is traditional Christmas plum cake..

 








Ingredients




Wine soaked dry fruits and nuts-1/2 or 1 cup



Egg-3



Brown Sugar or white sugar-3/4 or 1cup



Melted Butter/Oil (any oil which doesn’t have odor)-3/4cup



Baking Powder-1 tsp



Vanilla essence-1tsp



All-purpose flour-1 ½ cup



Cinnamon powder -1/2 tsp



Dry ginger powder-1/4 tsp



Clove powder-1/2tsp



Cardamom powder-1/2tsp





Caramelized sugar-1/2cup



Salt a pinch



Preparation




·         Grease a cake tray and line a parchment paper. Set this aside.

·         Pre heat the oven to 170 degrees for 15 minutes.

.          To prepare caramel syrup, heat a heavy bottomed pan and add ½ cup of white sugar.

·         Once it changes to dark brown colour, pour ¼ cup of hot water drop by drop, mix well and cook it for 5 minutes. (you need to be very careful at this step). Allow it to cool completely.

·         Separate egg whites and yolks. Then beat egg white until it become fluffy. Keep it aside.

          Now beat egg yolk, butter and sugar until creamy. Add vanilla essence, dry ginger powder, clove powder, cinnamon powder, cardamom powder, baking powder, salt and all-purpose flour (sieve all spice powders and flour before adding) to it and mix gently using a spatula.

          Then add cooled caramel syrup and dry fruits & nut mix (toss it with 2 tsp of all-purpose flour) and mix well without any lumps. Don’t over mix it.

·         now add beaten egg whites and gently fold.

·         Pour the batter to the cake tray. Knock it 2 times, then brush with 1tsp of milk on top to get a golden colour.

·         Bake it for 50 to 55 minutes.

·         Then insert a skewer or knife to check its done.

·          If it comes out clean, remove the pan from the oven and cool completely.

·    Optionally brush the cake with some wine and wrap it with plastic/ cloth and then in foil paper. Store the cake in room temperature for 2 days before serving.
