Ingredients
Rice
flour-1 cup
Egg-1
Semi thick Coconut
Milk-3/4 cup
Sugar-4tsp
Black
sesame seeds-1/2 tsp
Cumin
seeds-1/4tsp
Salt
a pinch
Oil
to fry
Preparation
·
Mix rice flour, coconut milk, sugar,
salt, sesame seeds, cumin seeds and egg in a bowl until it reaches dosa batter
consistency. Our achappam batter is ready.

Add more coconut milk if required.
·
Cover it and rest it for half an
hour.
·
Heat oil in a pan.
·
Dip achappam mould (here I use a
non-stick achappam mould) in hot oil for 3 to 5 minutes before you start making
achappam, this mould should always remain hot.

Now dip achappam mould in the batter (dip
only 3/4th of the mould into the batter) and then dip this in the
hot oil.
· after 20 seconds gently shake the mould or using
a spoon remove achappam from the mould.

Cook it on medium flame and fry it
on both sides.
·
Always dip the mould in hot oil
before dipping it in the batter.
·
Store fried achappams in an airtight container.
Note: if you are using a new mould,
or mould which is not used for long time, dip it in the oil (not hot) for
overnight. Here I used non-stick achappam mould, so you can dip this in hot oil
for 5 mins before making achappam.
If coconut milk is not available you can use normal milk also, i tried once and came out well.
