Puliyodharai/ Tamarind rice is a popular dish in south India. It’s basically a sour and spiced rice recipe.  Puliyodharai is a popular temple food served as ‘Temple Prasad (offering)’. Let’s see how to make it.






Puliyodharai/Tamarind Rice




Ingredients


For Puliyodharai masala powder,

Sesame oi/nallenna-1tsp
Coriander seeds-1tsp
Urud dal/black gram/uzunnu-2tsp
Chana dal/Bengal gram/kadala parippu-2tsp
Pepper-1/2tsp
Fenugreek seeds/uluva/methi-1/4tsp
Sesame seeds/ellu-1tsp
Kashmiri chilly-3

For making rice,

Cooked Rice-2 cup
Mustard-1/4 tsp
Black gram/Urud dal-1/4tsp
Roasted Peanuts-1tsp
Hing-1pinch
Tamarind extract-1/2cup
Turmeric powder-1/4tsp
Jaggery-1/2tsp
Dry red chilliy-2
Curry leaves as required
Sesame Oil-1/2tsp

Preparation

·         For making masala powder, Heat sesame oil in a pan and roast all spices till it turns light golden brown. Keep it aside.
·         Then in the same pan roast sesame seeds till it become golden.
·         Let it cool down and after that grind it to fine powder.
·         Our puliyodharai masala powder is ready.
·         Now to make rice, heat oil in a pan and add mustard, black gram, Bengal gram and peanuts.
·         When it splutters, add red chilly, hing, and curry leaves. Saute it for some seconds.
·         Then add tamarind juice, jaggery & turmeric powder.
·         Mix well and boil it until the oil separates from the pan.
·         Now add 2 tsp of puliyodharai masala powder and mix it for some time till the oil separates.
·         That is our pulikachal.
·         At this time add cooked rice and mix it gently….
·         Our puliyodharai is ready to serve….
