Ingredients
All-purpose flour-1/2 cup
Corn flour-1tsp
Curd-1/2 cup
Ghee/hot oil-1tsp
Cooking soda-a pinch
Yellow food colour as needed
Water as needed
Oil for frying
For sugar syrup,
Sugar-3/4 or 1 cup
Water-3/4 cup
Lemon juice-1/2 or 1 tsp
Cardamom powder-1/4tsp (optional)
Saffron strands as needed
Preparation
·
Mix
all-purpose flour, corn flour, curd, ghee, cooking soda, yellow food colour in
a bowl and make a semi thick batter by adding water.
·
Keep it in
warm place for overnight or 12 hours until it ferments.
·
In the
morning whisk the batter and add water if it’s too thick.
·
Now for
making sugar syrup, boil sugar with water until one string consistency.
·
Then add
lemon juice and saffron strands. keep the sugar syrup warm while you make the
jalebis.

To fry jalebis,
heat oil in a pan.
·
Now in a
zip lock bag or squeeze bottle (with a small tip) fill the batter and draw
circles from inside to outside in the oil (remember to keep the low flame, else
you can’t draw circles in it.)
·
Fry on both
sides till it become crisp and then add jalebis immediately to the hot sugar syrup.
·
Soak both
sides for 2 to 3 mins and then drain it.
·
Transfer
it to a serving plate.
Yummy
yummy jalebis are ready to serve.
