Tasty Aloo samosas are crispy from outside with a delicious
potato filling. If you have never attempted samosas at home before, this is the
perfect time to start. Let’s Start!!!
Ingredients
For the filling,
Potato-3
to 4
Green
chilly-2
Onion-1
big
Ginger-1/4tsp
Turmeric
Powder-1/4tsp
Dry
Mango Powder-1/4tsp
Chat
Masala-1/4tsp
Ajwain
seeds-1/4tsp (optional)
Coriander
seeds-1/2tsp
Coriander
leaves
Lemon
juice- few drops (optional)
Salt
Oil
For the samosa dough,
All-purpose
flour- 1 cup
Ghee/Butter-2tsp
Ajwain
Seeds-1/4tsp
Salt
Water
as needed
Preparation
For the filling,
·
Pressure
cook potatoes for 3 whistles, once done peel off the skin and mash it properly.
·
Heat
oil in a pan, then add, ajwain seeds & coriander seeds. Once it splutters,
add finely chopped ginger, onion & green chilly.
·
Saute
it until it gets transparent and add turmeric powder, dry mango powder, chat
masala and salt.
·
Add
mashed potatoes and mix well it for 2 to 3 minutes.
·
Drizzle
some lemon juice and add coriander leaves.
·
Transfer
it to plate and let it cool down. Our samosa filling is ready now.
For
the dough,
·
For
the samosa dough, in a mixing bowl add all-purpose flour, ajwain seeds and
salt.
- Once the dough holds the shape like the picture shown below, then add water gradually and knead it to form a firm dough.
Making of samosa,
·
Divide
the dough into 7 or 8 equal parts depending up on the size needed.
·
Now
take a ball of dough and roll it out each part into a round or oval shape. (It
should be neither too thick or too thin)

Then
using a knife cut it into half as shown as in the picture below.

Now
on the straight edge apply some water or 1tsp water + 1tsp all-purpose flour
mix (This will work as glue) with finger tips and fold as like in the picture shown below.

Now
join the ends bringing the watered edge on the top of the plain edge to give a
cone shape as shown as in the picture below.

Fill
the cone with potato filling and now seal the edges by applying some water.
·
Then
make it to triangle shape. Repeat the same process for the rest of the dough.

Heat
oil in a pan and fry the samosa on medium flame.
·
Stir
it continuously to cook evenly. Fry it until it get golden shade.
·
Once
done drain it using kitchen tissue.
Tasty and crunchy Aloo samosas are
