I have posted Vellayappam with coconut but today we are making 2 dishes without coconut. Vellayappam is a famous breakfast recipe and Vatteppam is a tasty and healthy traditional snack. Though the ingredients are very similar to that velleyappam but the method of cooking  different. Its sweeter than Vellayappam. so, with the same batter you can cook both.Interesting ah!!

Let’s see how to make it.





Small vatteppm

Ingredients




Raw Rice(Pachari/Long grain rice/Langkorn Rice/Idli Rice)-1 ½ glass

Poha/Rice Flakes- 1 cup

Yeast- 1tsp

Sugar-2 tsp

Salt as required



Preparation


To make velleyappam,



·         Soak rice in water for overnight or 5 hours.

·         Wash rice flakes before grinding.

·         To dissolve yeast, take some hot water and add yeast and sugar to it. Let it sit for 5 minutes till it become frothy. Keep it aside.

·         Then grind all the ingredients to a very smooth flowing batter by adding required water.

·         Then pour the batter to a wide vessel and keep it aside for fermentation (approx. 4hrs).

·         To make velleyappam, heat an appam pan, the pour a ladle of appam batter.

·         Then hold the handle of appam pan and rotate the pan in circular motion and put it back.

·         Now you can see some holes are forming, then close the lid and cook it for 3 to4 minutes.

·         Once cooked remove appam using a spatula.

·         Serve hot.



To make small Vatteppam,

·         Boil water in an Idly pot.

·         Add some cardamom powder and ghee roasted raisins to the batter and mix well.

·         Pour the batter in idly molds and close the lid.

·         Steam it for 10 to 20 mins.

·         Serve hot or cold.

To make normal vatteppam,

·         Boil water in a pressure cooker or a wide vessel.

·         Grease a round steel plate with oil or ghee, then pour the batter to it.

·         Steam it for 20 to 25 mins.

·         Check weather its done, otherwise steam it again for some time.



Note: You can adjust the amount of sugar.



 Serve it hot or cold with Coconut milk, Egg curry, Chicken curry or Potato stew.
