It’s a very simple and delicious recipe. This dish can be made quickly. I prepared Chicken chukka masala as a combination for Ghee rice. Chicken chukka masala is a spicy dish goes perfectly with all varieties of rice types and chapathi. I tried these recipes many times. Now Let’s see how to prepare Ghee rice and Chicken Chukka Masala.
Ghee Rice
Ingredients needed
Basmati rice – 1 glass
Onion – 1 finely sliced
Salt as required
Seasoning
Ghee/Butter-3 tsp.
Onion-1
Cinnamon – 2pcs
Cloves-2
Cardamom- 2
Bay leaf-1
Saffron-6 to 7 strands(optional)
Garnishing
Mint leaves
Coriander leaves
Raisins
Cashews
Preparation
- fry the onion in ghee till it becomes golden brown,fry raisins and cashews too and keep all these aside.
- Soak basmati rice in water for 30 minutes, after that drain the water and keep it aside.
- Heat ghee/butter in a pan (with tight lid) and add all the spices cloves, cinnamon, cardamom, bay leaf.
- Saute it for some time and then add sliced onion (mentioned in ingredients), fry it till they get golden shade.
- Now add the rice and mix it with the spices. Add 1 ¾ cups of water and needed salt.
- Then mix the saffron in 2 tsp. of hot water and add to the rice. (This gives special colour and taste to the rice).
- Add some coriander leaves, mint leaves to the rice and cook until rice is done. It may take almost 20 minutes.
- When the rice is done garnish it with the mint and coriander leaves, roasted cashews, raisins and fried onion.
Note: The preparation time and amount of
water for the rice will vary according to the type of rice.
Chicken Chukka Masala
Ingredients
Chicken-250g
Small Onion-10-12 pcs
Crushed ginger and garlic-2tsp
Chili powder-2tsp
Coriander powder-2tsp
Masala powder-1/2tsp (homemade)
Roasted Gram powder-1tspn(homemade)
Salt as required
Seasoning
Coconut oil/sunflower
oil-5tsp + butter-1tsp
Cinnamon-1pc
Cloves-1
Cardamom-1
Garnishing
Preparation
Masala powder: Heat 5 to 6
dry red chilies, 1 tsp dry coriander seeds,1 tsp fennel seeds in a pan without
using oil for 1 minute in medium flame. Then after some time make it a fine
powder. You can use this masala for making Rasam (a famous south Indian
recipe)
Roasted Gram powder: Heat 3 tsp roasted gram in a pan only for some seconds.
Then make it a fine powder. This powder makes the gravy thick and adds
more taste.
Cut
the chicken in to small pieces, wash well and keep it aside.
Step 1
- Heat 1 tsp butter and 2 tsp oil, add cinnamon, cardamom and cloves in a pressure cooker.
- When it splutters add 2 tsp chilli powder and 1 tsp coriander powder.
- Saute it for some seconds in a medium flame till the raw taste goes. Add 1tsp ginger garlic paste, saute it for few seconds.
- Then add Chicken pieces and half tsp Masala powder (mentioned above). Saute it again for few seconds and add little bit of water. Don’t add too much of water.
- Add a pinch of salt in to it.
- Close the lid and put the weight of the cooker, turn off the flame before the 1st whistle. Keep this aside.
Step 2: the masala part.:
Heat
the rest of the oil in a pan , add the remaining ginger garlic paste and some curry
leaves. Saute it well for some time.
- Then add finely chopped small onions, saute it till it becomes golden brown.
- Then add 1tsp chilli powder and 1tsp coriander powder, mix it well in a medium flame.
- Add the chicken to the pan. Mix it well with the gravy. Cook it for some time in high flame until we get a thick gravy (don’t close the pan).
- After that add 1tsp roasted gram powder.
- Mix it well with the chicken and cook it for 5 minutes.
Note: The amount of chilli powder and coriander powder can vary according to the taste.
This dish you can cook in a normal pan also.
