Beans stir fry is a very simple, quick and very healthy recipe for lunch. It goes well with rice and chapathy. I make beans stir fry weekly twice for lunch. Now let’s see how to make this recipe.



Beans Stir fry



Ingredients needed

Beans-100 grams

Turmeric Powder-a pinch

Salt- as required

Chilly Powder-1/2tsp



Seasoning

Mustard seeds-1/2 tsp

Urud Dal (Black Gram)-1/4tsp

Dried Red chillies-2

Curry leaves- as required

Oil-2tsp

Preparation

Wash the beans and cut it in to medium pieces.

·        Heat oil in a pan, add mustard seeds, when it splutters add urud dal, red chillies & curry leaves.

·        Saute urud dal for few seconds then add beans, turmeric powder and salt as required. Saute it for few seconds.

·        Add ¼ cup water.

·        Cook until beans get soft in a low flame. Add some water if needed.

·        At the end add 1tsp coconut oil.

·        Mix well and remove from the flame.

Note: We can make beans fry with coconut too.. Its called Beans Thoran. The process remains the same. After beans get soft add 1/4 cup of grated coconut to it. Saute it for few seconds .Then switch off the flame ,add coconut oil and curry leaves.
